Organic Chicken Breast Sandwich










Organic chicken breast
mixed greens or spinach and red cabbage from the farmers market
Leonardo and Roberto Gourmet Dipping oil (EVOO/garlic/cayenne and crushed black pepper spices)

12 grain whole wheat bread

Parmesan Cheese (just a sprinkle)


Season chicken breast with coarse black pepper, kosher salt, cayenne pepper, thyme, and garlic powder

Heat EVOO and minced garlic in a cast iron stove top grill skillet and place chicken in skillet when skillet is hot

once chicken is done (let it cool a bit)
place mixed greens and or spinach and red cabbage on bread
you can also add avocado (I’d say definitely ADD avocado)
place cooled chicken on top (it’s good if it’s still a little warm) and drizzle with dipping oil and sprinkle with a little parmesan cheese

note: you can also get any good balsamic vinegar from trader joe’s or the grocery store and it will work just fine
